Happy Cinco de Mayo!! No, it is not the Mexican Independence Day as you probably know by now :), however, it is a day where Mexican heritage and culture is celebrated in the US. and what better way to celebrate than with a really good, and easy Mexican Salsa!
This recipe is super easy, you only need 5 ingredients, and it is super delicious!! I make it at home very often and we love it!
Ingredients:
- 4 to 5 Roma Tomatoes
- 1/4 of large red onion
- 1 Jalapeno (seeded) – add more jalapenos if you like your salsa really HOT!
- Bunch of Cilantro
- Juice of 1 lime
- Salt to taste
Instructions:
- Put the onion and Jalapeno pepper in a food processor, pulse for about 1 minute
- Add the Tomatoes, Cilantro, Salt, and Lime, pulse for about 2 minutes for a chunky consistency.
- Pour Salsa into a container and mix well with a spoon and enjoy!
