Happy New Year!! I hope you had a fantastic Holiday season full of blessings, family and love. As we all know it is January and we are all starting to feel guilty about eating way too much during the Holidays! I’m sure many of us have plenty of resolutions for this year and one of them is usually to eat healthier!
One of my goals this year is to continue to eat as many fruits and vegetables as possible during the day. One easy way to increase your consumption of fruits and vegetables is by blending them into smoothies and creating delicious breakfast bowls!
This “Acai Breakfast Bowl” is super easy to make and it is truly delicious, my son Alex can’t get enough of it and he always asks for seconds! Acai is a type of berry usually found in the rain forest, and it is considered a super food due to all of its health benefits. You can read more on all the nutrients of this magical berry here! There are different ways you can get Acai berry; I usually buy it frozen from the health store (you can find it at Sprouts in Oklahoma) or you can buy it in powder form (I show both on the picture below), either way it is super yummy and easy to find.
To make this bowl you will need:
- 1 cup of almond milk
- 2 peeled bananas
- 1 cup of strawberries
- 1/2 cup of frozen or regular blueberries
- 3 dates (pitted)
- 1 to 2 tablespoon of chia seeds
- 1 tablespoon of the Acai powder, or one packet of the frozen one.
- 2 tablespoons of Gogi berries (if you have them)
Instructions:
- Put all the ingredients in your blender and blend away!!
2. Pour your smoothie into a pretty bowl, I’m using my coconut bowls here which I LOVE!
3. Make it yours by adding your favorite toppings and you are done!!
At my house, we like to top our bowls with shredded coconut, blueberries, strawberries, bananas, gogi berries and granola! but feel free to add any other type of fruit or nuts that you like.
And just like that you have a great breakfast bowl full of vitamins and nutrients to start your day! if you feel that it might take too long to eat or to make, just try to make them over the weekend and you will be hooked!
